fruit picking how reliable are employers?

whats the best way to find a fruit picking job? how do i go about it? im not in the country at the moment, so im trying to sort out work and accomidation before i leave, and to give me enough time for my visa. how can i be sure that the farms i ring are reliable as i dont have much time to search when i arrive?
